Nepal, Alu Tama Bodi is a very classical Nepali curry with somewhat sour flavor from tama (pickled bamboo shoots) cooked with potatoes (aloo) and black eyed peas (bodi). Tama curry is extremely popular and is one of my favorite dishes. A peculiar ingredient, the bamboo shoot, is used which makes it highly interesting and appetizing to many people.
